I'm back at the Brinkmann again today. Sure enough, the rain started right after match-drop. Thankfully, it ceased. I've got a 5 1/2-pound Mexican meatloaf cooking over two real nice hunks of apple wood.
How I changed it:
Crushed tortilla chips vs. bread crumbs
Ketchup + chopped chipotle in adobo vs. just ketchup/BBQ sauce
Poblano vs. green pepper
During the last half hour, I'll glaze it with my ketchup/chipotle sauce. I'll top it with cheddar and fresh cilantro and let the cheese melt. Then I'll spoon some of that kicky adobo sauce into some sour cream and whisk it to create a dipping sauce.
This is a first for me, so I'm all jacked up. A little comfort food atop the basement bar at halftime! Yeah, buddy!

P.S. Jeff H -- If you give the chowder another shot, try thickening it with more cheddar if it's too runny for your liking.

Incredibly, unbelieveably, ridiculously awesome! One for the books. So much flavor, a real nice bite. I'm my harshest critic, but it's possibly my best smoke yet. It was that good.
What's up all, I have done a few things that I will post in the coming days, just been swamped around here. And to top it all off, my female GSD gave birth to 10 puppies last night! It was crazy. Anyway, I hope to post my 3 way peppers and whole ribeye roast by tomorrow. Hope everyone is well!

No, I bred them. I have a blk and red who is of German decent, and a wht male who is a show dog. I show him through AWSA and WSCC conformation shows. She had 4 colored pups and 6 white ones (though the 1st one died :( she had it before I got home and it was her first time)
Terrence that is so cool... email me pictures (or post them, your call). My wife loves GS's, she'd love to see them. While I'm at it I'll post pics of my labs.
I just sent one of her and all the pups as well as one of one of the blk and brwn ones. They really are pretty cool.
You should post 'em here. We love dogs and have 2 Great Danes and a little Chihuahua mutt.
