This One's For You, Geno


I bust the balls of Geno K of Aurora and my friend Byron W quite a bit for using gas. However, I have to tell you, Byron's gas smoked concoctions often upstage mine when we grill together.

Yesterday Byron's dad and stepmother came over to his house, as did his brother-in-law and father-in-law. I always enjoy visiting with his family, especially when he cooks. The man loves to cook.

Below are the wings that Byron did, along with a brisket. Since he bogarted the brisket, I didn't get a taste. I'll take that up with him later.

I did have a healthy portion of these wings... very moist, tender, spiced well. Byron loves to make his own rubs and sauces and they always have quite the bite. Good stuff.

Great wings, Byron! I'd say "great brisket" too, but you didn't share that with me. Bastard.

I keep trying to tell you naysayers, gas is not evil! It gives absolute control over temperature and if hooked to Nicor a seemingly endless supply! The meat does not suffer any side effects, by my taste buds. The best part is no babysitting, I put it on and walk away!!! DING!! Dinner is ready!!

Hey Geno, I dont know about everyone else, but for me, being a lump hardwood charcoal user, thats part of the fun. The routine of going out and adding more charcoal, as well as wood. Its all part of the experience of cooking outdoors all year round. One day we'll bring you over........one day.

I have plans to build a "smoker". Time has not been on my side since the inception of the custom unit. It will probably end up happening in the spring. When it does, I will do a side by side comparison. Then I will taste for myself the exact same meat, one cooked with gas and one cooked with coal and wood. I do look forward to the test. In the mean time the gas will continue to burn!!

you know, guys, I'll say this... I kept wondering why the hell my ribs were always chewy and bland until I made them over charcoal.... that's what won me over.

See, I have had no problem using gas to cook anything. The flavor is what could potentially convert me. I am still skeptical.

Spent NYE with 315,000 of our closest friends on The Strip. Controlled chaos. So many stories. Came back with some dough. No FSU bet. That would mean I'd have to watch and I couldn't take any of that Boo-Hoo Bobby lovefest, which I'm sure took place ...

i do love to cook..i have always been creative and cooking gives me that outlet. i think that all forms of cooking should at some point be mastered. i love using charcoal. taste aside, it is a great way to show your true manly self. every man should be able to know how to a)light a charcoal grill..b)know how to cook a piece of meat on said grill..but the gas grill gives you a way to grill yet showcase flavors other than "the grill"..but i also take pride in my ability to perfectly sear a tenderloin and finish it a hot oven. braising,roasting,SMOKING, stewing..if youre goinng to cook food,good food, why not have the ability and open mind to cant anyway and anywhere you can..after all, in my experience, the women arent cooking anymore..
so that being said, i will let you guys get back to the charcoal/gas debate..

oh and ....sorry jeff. i didnt share the brisket because i didnt think it was up to my standars..besides,i was afraid to get my hands in the way of the food and jasons mouth!!

How dare you ruin a tenderloin in the oven. Just kidding, I have never tried doing beef of any kind in the oven. Temp control on the grill will give the same result and keeps us clear of that kitchen appliance.
