I'm getting the fare ready for tomorrow's festivities and we'll kick off with a -- get this -- 30-pound ham. I've already named him Wilbur.
I rubbed it down with some yellow mustard, followed by a generous portion of sweet 'n smoky rub. I'm guessing this hog will take at least 6 hours.

UPDATE! Ol' Wilbur has met his proverbial maker! What a beast and such a fun smoke! I'll let him rest (in peace) for an hour or two before carving into sammies. I'm going to whip up a nice horseradish mayo, along with some spicy mustard and regular mayo.

He's been on 5 1/2 hours. Just stuck a thermometer in to take his temp. Should have a post-smoke pic in a little while.
Anybody ever done spicy chicken wings in the slow cooker? I've got 6 pounds of those. Found a recipe with wave reviews. They're fall off the bone, but most reviewers suggested to pop them in the oven after about 5 hours to give them a little crisp. I think I'll go that route.
Wave reviews. Sheesh. Meant rave and I haven't even had a beer yet. Perhaps that's my problem ...

Wilbur's still inhaling apple wood. When I checked his temp at 5 1/2 hours, it was only 130. Fired up another chimney of coals.

Great looking ham, Tim. Where did you get it from? 30-pounders are not easy to find.
I agree with finishing the wings off in the oven. Meathenge just had something related to that. You don't get that nice color in the crockpot.
My Dad won it in a raffle. As for the wings, I'm not going to be to anal in terms of presentation tomorrow. I'm mainly looking for flavor, but I hear ya on the color.
I only wish I was North sledding!!
I had vehicle repairs to tend to. Spent the day working on such. The food looks awesome!!

Funny you mention that, Geno. I was just reminiscing about our trip to the northwoods almost two years ago to this day. God that was awesome fun. Love it up there. That's the only time you'll see me happy about winter, sledding in the Northwoods. Hope to get back there sometime soon.
Fishing in the Northwoods in June or July outweighs everything else by one million thousand hundred times ...
