Whole roaster brined in apple juice, garlic, lemon juice, black pepper, and mustard seed for a day and a half. Rinsed and patted dry. Then rubbed down with: dried parsley, rosemary, sage, thyme, paprika, garlic powder, onion powder, salt, and pepper. Cooked on the spit over lump hardwood charcoal and apple wood. Got to love cooking out in the open braving the elements! I LOVE this time of year!

btw, this time of year SUCKS. No wonder so many Russians are raging alcoholics.
Bird went into the brine at 8:30am and came out next day around 3pm. And SUCKS??? NO WAY! Hope winter is eternal! I can't stand the sun and the heat summer brings. Not a beach person, besides fishing, there's not that much good about summer. Snowmobiles, college football, snow, hunting all great things about winter. Then again, you ARE from Florida, right? J/K
To each their own. Shoveling snow, 50lbs of clothing, no baseball, ice every where, snot coming out of your nose uncontrollably, cabin fever, tracking snow into the house and getting bitched at for it... I could go on.
Summer: baseball, cargo shorts, birkenstocks, warm water to swim in, easier temp maintenance on the grill/smoker, endless activities outdoors, eating outdoors... I could go on. My preference.
