A Sign Of The Apocalypse

Once again apologies go out for the delay in posting.  The Great Geno K of Aurora, sent this in three freaking weeks ago and just now I'm getting it up.  Sorry GK!

I think the end of the world is near.  GK is big into gas grills... and he's using COAL??  I'm happy, don't get me wrong, but what's next?  Dogs and cats living in harmony?  Cubs World Series?  Bears fans eating Tofu?


I fired up the coal smoker and did a trio of pies for lunch! The first 2 were heavily doctored with cheddar jack and extra mozzarella along with a few seasonings. I over smoked these 2, but the 3rd one turned out perfect! I will have to try again. I used Roma pizzas, they are 7 for $10 at Woodman's. I recommend pie smoking to everyone!

Is that an ECB? Do you put the pie on the grate or do you have something underneath? Is the water pan in and filled?? What say you???

The pie is directly on the grate with water pan filled. I used steel blocks to separate the 2 grates. Temp control with coal is still an issue for me. In the mean time I still smoke on gas.
What is an ECB?

Way to go, GK! I fired up a couple Home Run Inn pies for that glorious Bears game yesterday.

ECB = "El-Cheapo-Brinkman"

It's a term used in the world of smokers for the $35 (or so) Brinkman that can be picked up at Home Depot. I have had no problems with mine and love using it. Perfect size for the family. I'll have to run out and get a frozen pizza now to give it a try.

Home Run Inn is the way to go. I've said it before and it bears repeating - most delivery pies I've had aren't as good as a frozen HRI
