So we finally had a cold spell. Temperatures hovering in the mid-20's and a stiff wind straight out of the Northwest. Time to suck it up, get that grill going and make something good! These are Greek steaks from the Walt's butcher (flank steak, spinach, and feta cheese). They were kind enough to make these for me in a pinch today. All I had to do was get a chimney of charcoal going and I was halfway there.
Served it with a roasted poblano, onion, spinach, queso fresco cheese and basmati rice. Well worth the effort!
